This recipe is just delicious! I am in the unique position of being required to eat gluten free for the rest of my life due to celiac disease, but also I want to get healthy and lose weight. You can use yellow or green zucchini squash for this recipe, whatever you have access too. If you are watching calories you may use part skim/reduced fat cheeses or omit ricotta. Start by preheating your oven to 375 degrees.
2 medium or 3 mini squashes sliced to 1/8 inch using mandoline
12 ounces Mozzarella cheese shredded
1 pint ricotta cheese
1 bottle of sauce, do NOT add any water (I prefer something spicy like a diavolo sauce here or add 1 tsp red pepper flakes to regular sauce)
