Butternut Squash Soup


We serve this where I work and it is my favorite soup. Thank you to the originator of this delicious blog post


Remember guys always buy organic when you can!


– 1/2 medium/large butternut squash (skinned, cubed, seeds set aside)

– 1 medium white potato (peeled, diced)

– 1 medium red onion (peeled, chopped)

– 1 clove of garlic (finely chopped)

– 1 1cm cube of fresh root ginger (very finely chopped)

– 2 tsp of mixed all spice

– 3-4 tsp of curry powder

– 1 tsp of chilli powder

– 1 knob of butter

– bunch of fresh corriander

– 1 small tub of quark

– pinch of salt

-Ground black pepper

-Handful of fresh baby spinach (optional)

– 200ml veg stock

– dash of whole milk

– 1 carrot either grated or finely sliced

– 1 stick of celery finely sliced


Preheat the oven at about 190 degrees C
